What is huggis?
Huggis is a Scotland's best-known regional dish, a rich, delicious, aromatic, mouth-watering spicy concotion made from lamb's offal including such intestins as lungs, liver and heart mixed with suet, onions, herbs and other matching international and regional spices all packed into a skin which nowadays is made of a sheep's stomach (washed beforehand). Made and served by professional chefs on Burn's Night, the huggis is often accompanied by mashed potatoes and mashed swede or turnips. Although the huggis neither sounds nor looks appetizing, most people brave enough to try it agree that it is exremely tasty!
